Baked cornflake tofu with noodles 🥢🥦

Crispy tofu ingredients:
1 block smoked tofu
handful of cornflakes (crumbled)
3 tbsp corn flour
2 tbsp nutritional yeast
1 tsp salt
1/3 cup oat milk

Freeze and defrost tofu, then squeeze out the excess of water. Cut it into thin slices and dip them in oat milk. Then cover them with the mix of crumbled corn flakes, corn flour, nutritional yeast and salt. Put your tofu slices on a baking sheet and sprinkle them with olive oil. Bake for 30 minutes in 200°C/390°F (flip halfway through). After that, broil for additional 3 minutes to add some extra crunch.

Meanwhile prepare your noodles:
1 ramen brick
2 tsp tomato paste
1/4 cup oat milk
2 tbsp soy sauce
1 tbsp squeezed lemon juice
1/2 tsp powdered ginger
1 tsp garlic flakes
1/4 cup water
Chives

Combine all sauce ingredients (tomato paste, oat milk, soy sauce, lemon juice, ginger, garlic and water), and heat them up in a saucepan. Add cooked noodles and mix it all together. Once you transfer it onto a plate, decorate with fresh chives. Add your baked tofu and serve with steamed broccoli or other veggies of choice. Enjoy 💚
