Baked tofu with veggies 🥦🍅
Another super simple yet extremely tasty recipe. Whenever I need a quick lunch just for myself, this is what I tend to go for 😋
Pro tip 👉 freeze and defrost your tofu. Then squeeze out of the excess of water. Trust me, it completely changes the texture 👌
200g natural tofu
1 tsp whole grain mustard
splash of soy sauce
pinch of cinnamon
Cut tofu into cubes, put them in a bowl and mix with spices. Once they’re evenly seasoned, transfer them onto a baking sheet.
Cut broccoli into florets. Mix them with a bit of soy sauce and lemon juice, then transfer them onto the baking sheet next to your tofu.
Cut cherry tomatoes in halves and put them in a baking dish. Sprinkle with some soy sauce and lemon juice. Bake the tomatoes together with tofu and broccoli for 30 minutes in 170°C/340°F
Meanwhile prepare your dressing
1 tsp vegan mayo
1 tbsp passata
splash of plant milk
salt and pepper
Mix all ingredients together. Once the veggies are done, transfer them onto a plate and pour the dressing over them. Enjoy 💚
