Berry tart 🫐🤍

This is by far the prettiest dessert I have ever made and I am so proud of myself for pulling that off. It did require quite a lot of time and work, but it was definitely worth it 😍

Crust 💛
1 cup coconut flour
1/2 cup almond flour
3 heaped tbsp corn flour
1/4 cup melted coconut oil
2 tbsp erythritol
1 tbsp apple cider vinegar
2 tbsp oat milk

Mix all ingredients in a bowl and transfer them into a silicone tart form. Press the crust firmly into the form and bake for 15 minutes in 170°C/340°F. Once it’s done, leave it to completely cool off.

Berry layer ❤️
250g frozen berries
150ml water
2 tbsp squeezed lemon juice
1 tbsp erythritol
1 tsp agar agar powder

Put berries, water, lemon juice and sweetener in a saucepan and heat it up until the berries dissolve. You can also blend them with a blender. Leave the mixture to cool. Once it’s room temperature, add agar agar powder and heat it up again. Bring it to boil and keep simmering while stirring for about 10 minutes. Leave it for another 10 minutes, then pour over the crust. Put the whole thing in the refrigerator for at least an hour.

Top layer 🤍
400ml (1 can) coconut milk – I used 12-14% fat
50ml vanilla oat milk
3 tbsp erythritol
1/2 tsp cardamom
1 tbsp squeezed lemon juice
1 tsp agar agar powder
1 tbsp corn flour

Put coconut milk, oat milk, sweetener, cardamom and lemon juice in a saucepan, and heat it up until the coconut milk melts. Leave it to cool off. Once it’s room temperature add agar agar powder and corn flour. Keep stirring and heat it up again. Boil it for about 10 minutes. Make sure there aren’t any clumps of corn flour left. Once it’s done, leave it to cool off for another 10 minutes. The top part of the mixture might become a bit solid, so make sure to mix it in, if that happens. Then pour the mixture over the berry layer. To make sure it doesn’t damage the berry layer, pour it over a spoon, so that the stream of liquid spreads and is more subtle. Refrigerate the tart overnight.

I decorated mine with frozen berries, coconut flour and cacao nibs. Enjoy 🤍
