Chocolate & almond butter stuffed moonpies 🍫

I was in need of a chocolate dessert, so this is what I’ve come up with. I’m in love with these. That’s all I’m gonna say 😂

Dry ingredients:
100g spelt flour
25g almond flour
25g millet flour
25g coconut flour
3 tbsp erythritol (or any granulated sweetener)
1/2 tsp baking soda

Wet ingredients:
2 tsp squeezed lemon juice
1 tbsp melted coconut oil
1 tbsp apple cider vinegar
2 chia/flax eggs (I used one of each)
25ml warm water
25ml oat milk

Spices:
1 tsp cardamom
1 tsp powdered maca root
1/2 tsp powdered vanilla
1/2 tsp Ceylon cinnamon

Filling:
dark vegan chocolate
almond butter

Combine dry and wet ingredients and throw in spices. Once everything is mixed well, transfer your dough onto a floured surface (use either spelt or millet flour for that). Knead the dough some more. If it’s too sticky, add more flour. If it’s too dry, add a splash of plant milk.

Either roll out the dough, or just spread it out evenly, using your hands. Then cut out circles with a glass. On one half of each circle put a small piece of vegan chocolate and a little bit of almond butter. Then brush water around the edges of each circle and fold it in half, pressing the edges together. Put the moonpies on a baking sheet and brush a bit of oat milk on top of each. Bake for 25 minutes in 170°C/340°F. Enjoy 🤍
