Cinnamon-date banana bread 🍌

Does the world need another banana bread recipe? Probably not. Did I create one anyway? You bet I did. But it’s not just any banana bread. It might just be the best one I’ve head so far. Definitely worth giving it a try. The cinnamon-date glaze (and swirl in the middle) is a game changer 😋

ingredients:
3 ripe bananas
1 cup millet flour
1/2 cup almond flour
1/2 cup rolled oats
1/4 cup spelt flour
1 heaped tbsp almond butter
2 tbsp almond oil (the one that separates from almond butter)
1,5 chia/flax eggs
1/2 tsp baking soda
1 tsp lemon juice
1 tsp cardamom
1 tsp vanilla powder

Mash bananas with a fork, add almond butter and oil, flax eggs, baking soda and lemon juice. Fold flours and oats in, then throw in cardamom and vanilla. Make sure you mix all ingredients well. Line your bread form with a baking sheet and transfer half of the batter into it.

glaze ingredients:
70g dates
5 tbsp date water
2 tbsp almond butter
4 tsp cinnamon

Soak dates in hot water for about 20 minutes, then blend them until they turn into smooth paste. Add some water that you soaked them in, to make the date paste less thick. Add almond butter and cinnamon and blend everything together. Transfer half of the glaze onto your banana layer. Then cover it with the remainder of the banana batter. On top spread the rest of the date glaze and add some blanched almonds. Bake for 30 minutes in 170°C/340°F.
