Cinnamon rolls 🤍

No wheat flour, no yeast, no white sugar. But still so much flavor 😍

I won’t lie and say they taste exactly like the original thing. But believe me when I say they’re absolutely delicious 😋 And they’re actually very healthy! I’m seriously proud of coming up with that recipe and I hope you try it out 🤍

Dry ingredients:
75g spelt flour
50g amaranth seed flour
25g almond flour
25g corn flour
3 tbsp erythritol
1/2 tsp baking soda

Sift flours through a strainer (except the almond one because it won’t fit through). Add sweetener and baking soda.

Wet ingredients:
25g plant milk
25g warm water
1 tbsp squeezed lemon juice
1 flax egg
1 tbsp melted coconut oil
1 tbsp apple cider vinegar

Mix dry and wet ingredients all together and knead the dough well using your hands. Add some more flour (any of the previously used ones) if the dough is too sticky. Spread the dough thinly on a baking sheet and prepare cinnamon filling.

Filling ingredients:
3 tbsp coconut oil (solid)
5 tsp cinnamon
3 tbsp erythritol
Splash of plant milk
1 tsp apple cider vinegar

Mix all filling ingredients until they’re thoroughly combined. Then spread the paste onto your dough. Roll the dough up tightly and cut it up into even parts. Either transfer your rolls directly onto a baking sheet, or put them in muffin forms to make sure they keep their shape. Bake for 30 minutes in 170°C/340°F

Enjoy 💚
