Creamy pasta with roasted chickpeas 💛
Cook pasta according to the packet. Sauté mushrooms and onion. Add fresh spinach, a splash of soy sauce, black pepper and garlic powder. Once spinach softens, pour in oat cream. Add sun-dried and cherry tomatoes. Make sure the cherry tomatoes soften, but don’t dissolve. Combine the sauce with your pasta.

Combine chickpeas with spices in a bowl, transfer onto a baking sheet and bake for about 25-30 minutes (depending on how crunchy you want them to be). Sprinkle roasted chickpeas on top of your pasta and enjoy 💛
