Crispy baked tofu with broccoli 🥦

This is one of the best dishes I’ve had recently. And I came up with it by accident 😂

what you need:
1 block of tofu (frozen and defrosted) – I used marinated but smoked will taste awesome as well
1/2 broccoli
1/3 cup oat milk
2 heaped tbsp corn flour
1 tbsp nutritional yeast
1 tbsp instant oats
vegan cheese – I used violife_foods
1 tomato
1 tsp vegan mayo
1 tsp squeezed lemon juice
olive oil
salt & pepper

Basically I had some marinated tofu in my freezer. So I defrosted it, squeezed out the excess of water, and cut it into pretty thin slices. Then I dipped the slices in oat milk and covered them with a mix of corn flour, instant oats and nutritional yeast (plus salt and pepper). Then I put the tofu slices down on a baking sheet and sprinkled them with some olive oil. Onto the same pan I added some broccoli and also sprinkled it with salt, pepper and olive oil (and some grated vegan cheese). I had a tiny bit of the flour mix and oat milk left, so I combined it and poured it over the broccoli. I baked the whole thing for around 30 minutes in 200°C/390°F (I flipped the tofu halfway through). I also broiled the tofu for additional 3 minutes to make it more crispy. Once it was all done, I transferred everything onto a plate and added fresh tomato. I also sprinkled it with some quick dressing made of vegan mayo, lemon juice, water and pepper 💚

I couldn’t believe how good that was 😂
