Energy granola bars 😋

150g dates
100g granola (1 cup)
50g rolled oats (1/2 cup)
1 heaped tbsp applesauce (optional)
1 tbsp chia seeds
1/2 tsp cinnamon
1 tsp cacao powder

Soak dates in hot water for 10 minutes then throw them in a blender. They don’t have to be completely smooth, some left pieces are fine. Combine the date paste with rolled oats and granola. You can use either homemade granola or store bought. I used a store bought mix, containing sunflower seeds, pumpkin seeds, expanded millet, almonds, coconut chips and hazelnuts. Add applesauce, chia seeds, cinnamon and cacao powder, and mix it well. Transfer your mixture into a wide baking pan (covered with a baking sheet) and press it down firmly.
Bake it in 170°C/340°F for about 20 minutes. Once it’s done, leave it to completely cool off and prepare the chocolate layer.

1 tbsp coconut oil
1 tbsp chocolate coconut paste
1 tbsp strawberry almond butter
2 tsp raw cacao powder
cacao nibs

Melt coconut oil in a saucepan and add chocolate paste and almond butter. I used chocolate coconut and strawberry almond, but any combination will work. Add cacao powder and mix it all well together. Then leave it to cool off a bit and pour it over the seeds. You can also sprinkle some cacao nibs on top. Refrigerate it for a few hours (until the chocolate layer thickens). Then cut it into bars and enjoy 🤎
