Grapefruit brownies 🍫

I know, sounds weird, but trust me, it’s awesome 🤩 So I had a borderline overripe grapefruit that I needed to save, so I figured why not bury it in cocoa? Thankfully it worked out perfectly and the brownies turned out super soft and fudgy 😱

dry ingredients:
1 cup instant oats
1 cup almond flour
1/2 cup millet flour
5 tbsp erythritol (or any granulated sweetener)
10 tbsp raw cacao powder
3 tbsp desiccated coconut
1 tsp baking soda

wet ingredients
juice from 1 grapefruit (about 2/3 cup)
6 tbsp applesauce
1 tbsp apple cider vinegar
2/5 cup oat milk
2 tbsp nut butter (I used 1 tbsp tahini and 1 tbsp almond butter)

Combine all dry and wet ingredients together, then transfer the batter into a shallow baking form. Sprinkle your brownies with some more desiccated coconut, chopped almonds and vegan dark chocolate. Bake in 180°C/360°F for 35 minutes. Once they’re baked, let them cool off a bit, so that they thicken.

The brownies taste best next day, but warm. So make sure you microwave them before serving. Enjoy 🤍
