LEFTOVER CASSEROLE 🍅🍞

Perfect for when you’ve got some stale bread and not-so-fresh veggies that you don’t want to go to waste

Ingredients:
– bread
– any veggies (here: sweet peppers, spinach, tomatoes, zucchini)
– olive oil
– 2 cloves of garlic
– 1 tbsp of soy sauce
– 1 tsp tomato paste
– cashew parmesan

Mix a couple of tablespoons of olive oil with crushed garlic, soy sauce and tomato paste. Brush a bit of the mixture into a casserole dish. Cover the entire bottom part with a layer of bread and oil it some more. Layer some of your favorite veggies – I used sweet peppers and spinach. Cover it with another layer of bread and oil it again. Layer the rest of your veggies – I used another layer of spinach, sliced tomatoes and zucchini. Pour the remainder of the oil mixture onto your casserole and sprinkle the dish with cashew parmesan or nutritional yeast flakes.

Bake for 40 minutes in 200°C/390°F
