Mango stir-fry 🥭

Not very photogenic, but sooo tasty. Believe me 😂

ingredients:
1 mango
1 zucchini
1 sweet pepper
150g fresh spinach
2 handfuls of cherry tomatoes
2 garlic cloves (minced)
2 cm ginger root (minced)
2 tbsp soy sauce
a few mint leaves
salt and pepper

First cut and sauté zucchini on rapeseed oil. Once it starts to get golden, add sweet pepper and throw in some salt and pepper to taste. Then pour in soy sauce. Mince garlic and ginger and add that to your veggies. Add fresh spinach and stir until it’s cooked. Once all vegetables soften, add cherry tomatoes cut in halves and mango stripes. Lastly chop some mint leaves and throw them into the mix. Sauté everything together for a short moment. Make sure your tomatoes soften, but don’t dissolve.

I served my stir-fry with millet, but you can swap that out for rice, or whatever you prefer. Enjoy 💛
