Mung beans with veggies in peanut butter sauce 🥦

The tastiest dinners are made by throwing random plants together 😂 This one is a perfect example 🥰

ingredients:
300g mung beans (uncooked)
1 small broccoli
2 bok choys
1 onion
250g mushrooms
handful of cherry tomatoes
a few sun-dried tomatoes
3 garlic cloves
3 tbsp soy sauce
2 tbsp powdered peanut butter
Salt and pepper

Serves 6

Soak and cook mung beans according to instructions on the packet.

Slice mushrooms and sauté them on olive oil. Get rid of water if they produce too much of it. You want them to be golden, not grey and soggy. Once they start getting golden, add chopped onion. After the onion has softened, add minced garlic, raw broccoli and chopped white part of bok choy. Add soy sauce and powdered peanut butter. Throw in some salt and a lot of freshly ground pepper, then cover your pan with a lid to make sure the broccoli gets cooked. Once it softens a bit (but is still crunchy), add bok choy leaves, sundried tomatoes and cherry tomatoes. Mix it all for a short moment. You want your tomatoes to keep their shape, not dissolve. Once you’re done, add your mung beans to the mix and enjoy 💚
