Oyster mushroom pulled “pork” with broccoli rice 🍄🥦

💚 1 small broccoli (grated)
💚 1 red onion
💚 Olive oil
💚 1 nori sheet
💚 Salt & pepper
💚 Dried marjoram
💚 1 tbsp squeezed lemon juice
🤍 Oyster mushrooms
🤍 Coconut oil
🤍 1 diced tomato

Sauté red onion on olive oil. Once it softens add grated broccoli. Throw in some dried marjoram, salt and pepper, a torn up nori sheet and add squeezed lemon juice. Sauté everything some more. Once it’s done, transfer it onto a plate.

Tear up oyster mushrooms into thin stripes. Make sure they’re completely dry before you start sautéing them on coconut oil. This is going to take a while, because you want your mushrooms to get golden. Once they do, add a fresh diced tomato to them. Meanwhile you can prepare your sauce.

❤️ 3 heaped tsp tomato paste
❤️ 1 tbsp soy sauce
❤️ 1/2 cup water
❤️ 1 tbsp squeezed lemon juice
❤️ 1/2 tsp smoked paprika
❤️ 1/2 tsp ground ginger
❤️ 1 tsp crushed garlic flakes
❤️ 1 tbsp nutritional yeast
❤️ Salt & pepper
❤️ Handful of sunflower seeds

Mix tomato paste with soy sauce, water, squeezed lemon juice and all spices in a bowl, and add it to your mushrooms. Throw in some sunflower seeds and keep sautéing everything until the sauce reduces and the mushrooms are entirely covered with it. Then transfer your mushrooms next to broccoli.

You can also roast some almond flour with nutritional yeast and salt on a dry pan, to make something like parmesan. I also sprinkled some black sesame seeds on top.
