PASSION FRUIT PUDDING CUPS 💛😋

So I wanted to make something a little bit different than I usually do today. I had some passion fruit that I wanted to use, so I gathered all ingredients I could find at home and I came up with pudding cups. They turned out amazing and I highly recommend you try them out 😍

BASE:
1 cup of almond flour
1/2 cup of coconut flour
3 tbsp of corn flour
1/4 cup of coconut cream (melted)
2 tbsp of rapeseed oil
Splash of plant milk
1 tbsp of apple cider vinegar
1 tbsp of agave syrup

Mix all the ingredients together and transfer the dough into muffin forms. Bake for 15 minutes in 180°C/360°F. Once they’re done, leave them to cool off.

Meanwhile prepare the pudding layer.

PUDDING:
150g of coconut yoghurt (I used peach and passion fruit flavored one, but regular coconut will work as well)
1 packet of vanilla pudding
1/3 cup of oat milk
2 tbsp of corn flour
2 tbsp of lemon juice
2 tbsp of coconut cream (melted)

Heat all the ingredients up in a saucepan. Keep mixing until your pudding is smooth and sticky. Transfer it onto the base layer of each cup and refrigerate the cups for a couple of hours. Decorate the tops with some fresh passion fruit. Keep refrigerated
