Raspberry chia cups 💕

Who doesn’t love a good three-layer dessert? These adorable cups are everything you would want in one. They’re also much easier to make than it might seem. Definitely worth trying 🥰

recipe for 12 cups

base layer:
50g dates
1/3 cup almond flour
1/3 cup oat flour (blended oats)
1/3 cup coconut flour
1 tbsp corn flour
1 tsp vanilla powder
3-4 tbsp date water
3 tbsp coconut oil (melted)
1 tsp apple cider vinegar

Soak dates in hot water for about 20 minutes. Blend dates and save water for later.
Combine all ingredients, then transfer the dough into muffin forms and press it firmly. Bake for 20 minutes in 170°C/340°F

jam layer:
60g frozen raspberries
2 tbsp date water
1 tbsp lemon juice
1 tbsp erythritol (sub for any sweetener)
1 tbsp chia seeds
1 tsp açaí powder (optional)

Put raspberries, date water, lemon juice, sweetener and açaí powder in a saucepan and heat up until the raspberries dissolve. Once they do, add chia seeds and keep stirring until they expand and the sauce thickens. Then put 1 tsp of your jam onto each of the cups. Refrigerate while making the top layer.

chocolate layer:
2/3 cup oat milk
2 tsp raw cacao powder
1 tbsp erythritol (sub for any sweetener)
1 tsp powdered maca root (optional)
1/2 tsp agar agar powder

Combine all ingredients in a saucepan and bring the mixture to a boil. Let it boil for about 5 minutes and keep stirring. Leave it for 3-5 minutes to cool of a bit and stir again to avoid any clumps forming. Once you’re ready, pour the mixture over your cups and refrigerate for about 2 hours (or preferably overnight). Enjoy 💕
