Savory millet muffins 🥕

1 cup cooked millet
1 grated carrot
1 grated zucchini
1/2 sweet pepper (finely chopped)
Handful of finely chopped chives
1 cup spelt flour
1/2 cup corn flour
1/2 cup instant oats
3/4 cup oat milk
1/4 cup olive oil
2 flax eggs
Salt and pepper

I mixed all ingredients in a large bowl, then transferred the mixture into muffin forms. I added some black sesame seeds on top of each muffin and I baked them for an hour in 170°C/340°F.

They become firmer once they’re cooled, so I suggest waiting a bit before eating 😂
