Sweet buns with tofu filling 🤍

dry ingredients:
250g spelt flour
50g corn flour
50g amaranth seed flour
5 tbsp erythritol
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp powdered maca root (optional)

wet ingredients:
150g apple purée
100g oat milk
50g water
1 tbsp olive oil
1 tbsp apple cider vinegar
1 flax egg

Combine dry and wet ingredients. The dough will be very sticky so you might have to use your hands. After you’re done, prepare the filling.

tofu filling:
1 block tofu (180g)
1/4 cup oat milk
1 tbsp squeezed lime juice
2 tbsp erythritol

Crumble your tofu and put it with the rest of ingredients in a saucepan and heat it all up. Keep stirring until it’s well combined. I used 1/2 cup oat milk, which was too much, so I added some corn flour to make the filling thicker. 1/4 cup oat milk should be enough though.

Take a bit of the dough and flatten it out on your hand. Then put some tofu in the middle, close the dough and roll it into a bun. Then put the bun onto a baking sheet and prepare the next one. Tip: cover your hands with flour before preparing each bun, so that the dough doesn’t stick to them (it is very sticky 😂)

You’ll most likely end up with some leftover tofu filling. You can eat it for example in your oatmeal or with crepes.

Once your buns are all ready on the baking sheet, put them in the oven and bake for 40 minutes in 170°C/340°F. Keep checking on them though, because it might depend on the oven.
