TOFU SCRAMBLE 💛
My favorite way to make tofu scramble actually taste like egg is to add:
💛 a bit of mustard
💛 nutritional yeast
💛 a splash of plant milk
💛 turmeric (for color)
💛 black salt (Kala Namak) – this is a vital ingredient as it smells and tastes like egg
I mash the tofu together with all the spices. Then I fry the mixture on a pan in rapeseed oil until I deem acceptable. Sometimes I fry up some onion beforehand and put it in the mix as well.
I usually top the tofu scramble with fresh chives and serve it with some sweet potato fries and fresh tomatoes on the side.
