Vegan quiche 🌱

crust:
150g spelt flour
50g corn flour
50g millet flour (sub for more corn flour)
100ml water
1 flax egg
3 tbsp olive oil
1 tsp salt

Combine all ingredients, then transfer the dough into a lined round baking dish. Spread evenly and bake for 15 minutes in 180°C/360°F

filling:
150g chickpea flour
200ml water
2 tbsp nutritional yeast
1 tsp black salt
1/2 tsp turmeric
1/3 tsp baking soda
black pepper

Mix all ingredients in a bowl and add veggies of choice. I used:
asparagus (sautéed on olive oil)
sun-dried tomatoes
cherry tomatoes
green olives
capers

Transfer the mixture onto the baked crust and bake for another 40 minutes in 180°C/360°F. Enjoy 💚
