Vegan spaghetti “bolognese” 🍝

Another wholesome pasta recipe. I was so happy with how it turned out 😱 It tasted exactly like the spaghetti bolognese I remember from my childhood 😍

corn flour spaghetti
onion
1/2 leek
soy sausages
handful of cherry tomatoes (cut in halves)
1 raspberry tomato (diced)
5 sun-dried tomatoes (chopped)
500g passata
fresh basil (chopped)
spices: dried oregano, dried wild garlic, smoked paprika, salt and pepper
vegan mozzarella

Cook pasta according to packet.
Sauté onion and leek. Add finely crumbled soy sausages and fry until they’re golden. Add all spices, raspberry tomato, cherry tomatoes and sun-dried tomatoes. Pour in passata and add some fresh basil. Let the sauce simmer for a bit, then put it on your spaghetti and sprinkle with some vegan mozzarella. Enjoy 💚
