Yeast-free vegan pizza 🍕

This has quickly become my go to dinner whenever I don’t feel like being particularly creative. It’s so easy and quick to make. And it always turns out amazing. Definitely worth a try ☺️

🍕 dough ingredients:
250g spelt flour (both whole grain and white will work)
150ml warm water (you might need a bit more if you’re using white spelt flour)
3 tbsp olive oil
1 tbsp nutritional yeast
2/3 tsp baking soda (+ 1 tsp lemon juice or apple cider vinegar)
1 flat tsp salt

Combine all ingredients (add water gradually). Add more flour if the dough is too sticky, or more water if it’s too dry. Roll it thinly (into a semi circle) on a baking sheet. Then prepare your tomato sauce.

🍅 sauce ingredients:
3 tsp tomato paste
1 tbsp olive oil
1/4 cup water
lots of dried oregano and basil
salt & pepper

Combine all ingredients, then spread your sauce evenly on the pizza base. Sprinkle it with some vegan cheese and other favorite toppings. Bake for 20 minutes in 200°C/390°F.

🍕 the toppings I used were:
vegan mozzarella
sweet corn
asparagus (sautéed beforehand)
broccoli (blanched beforehand)
cherry tomatoes
sun-dried tomatoes
